while I was on maternity leave, the baby + I settled into quite the morning routine. we’d take the dog for a walk. once we got home, it was breakfast + the today show. (not mentioned: the large, multiple cups of coffee). one morning, the today show featured a segment about how to live healthier + longer. mind you, I had JUST had a baby. so, being healthier + living longer was now topping my priority charts. I have a small human I need to be around to take care of!

it was about the “blue zones” + the author who visited the healthiest places on earth to learn from + study the habits of the people living there. it was fascinating! one visit was to a region in costa rica. they talked about how their diet consists mostly of beans + rice. and even threw out a statistic, saying: if americans added 1 cup of beans to their daily diet, it would add 3-4 years to their life. that’s it? eat beans + live longer. sold.

don’t ask me why when I heard I needed to add more beans to my diet, I immediately thought of burgers.

it’s a question I can’t answer. but I’m glad I did. they’re delicious. I used the pioneer woman’s black bean burger recipe. you really only need four ingredients: black beans, seasoned breadcrumbs, an egg, and onion. the first time I made them, I was in shock – it took no time at all to make. that alone will win me over. if I can make dinner in less than thirty minutes, we’re probably putting that meal on repeat. so we did. black bean burgers + “fries”. (which are just roasted potatoes, tossed in olive oil + steak seasoning).

we’re perfectly content eating our burgers just plain. but to add a little variety, I put the black bean patty + a slice of gouda cheese in a tortilla and sauteed it in a pan until the cheese melted. (we rarely have bread in our house, hence the tortilla). if I’ve inspired you to go whip up black bean burgers tonight, can I also recommend you add two game-changing items to your grocery list? gouda cheese slices + sriracha ranch dressing (both from trader joe’s). the sriracha ranch is the sauce we drown our burgers in. (no, I am sure they don’t eat ranch dressing the “blue zones”. baby steps).

    I love a good black bean burger, but I’ve never tried making one at home. (Unless you count frozen Morning Star black bean burgers.) I’m going to have to try these! I love how they don’t require many ingredients or that much time to make.
