buffalo chicken lettuce wraps

last weekend, we invited my parents + aunt over to watch the big state rivalry game; iowa vs. iowa state. with any football game, an abundance of food is necessary. the games are long + grazing is expected. I have a thing for buffalo chicken. I knew I wanted to incorporate it into my game day spread, but refused to make into a dip. (mostly because I’d eat the entire bowl + have to run 800 miles. or more). my mom has a thing for asian lettuce wraps. we’ve each made them + they’re delicious. but sheesh, they require an endless amount of ingredients and a lot of cook time. so I took our things and made them into one scrumptious thing. bonus: they’re easier to make than asian lettuce wraps + they’re healthy-ish. (depending on how much dressing you add).

(side note: I was going to make pumpkin pudding shots, but the cool whip decided to stay at the store. when shopping lists fail).

did I mention how delicious these are? you must try!

the recipe is fairly simple + straightforward. add a drizzle of olive oil to a skillet (preferably with higher sides). add the diced onion + bell pepper, sauté. while that is going on, season the chicken breasts (salt + pepper) and cut into chunks. add a thin layer of buffalo sauce to the skillet. put the chicken pieces into the skillet + add more buffalo sauce. add a bit of water or chicken stock to the pan too. you want your chicken to be majority covered. let cook. flip pieces + cook thoroughly (obviously). once done, transfer to a cutting board and get to shredding. just use two forks. when everything is shredded, add a layer of the chicken to a serving dish + a drizzle of buffalo sauce, repeat until all chicken is in there. (we like it saucy. plus the celery + lettuce will downplay the buffalo, so more is merrier). peel lettuce leaves. get your bleu cheese dressing + celery for toppings. (you can also use ranch or bleu cheese crumbles). you’re ready to eat.

for ingredients: head of lettuce. chicken breast. buffalo sauce. diced onion, bell pepper + celery. bleu cheese dressing.

(important note: my alma mater won the game, go hawkeyes!).
