besides grilled cheese + veggie burgers, try to think of a sandwich that doesn’t have meat? it’s hard, right? when the husband + I made the decision to stop eating meat, I thought I’d never eat another sandwich again! slightly dramatic, but it was an actual thought. this is where creativity + the internet come in handy. there are geniuses in our midst.
I’d be lying if I didn’t tell you, the thought of mushed chickpeas between two pieces of bread sounded AWFUL. it took awhile for me to muster up the courage to make + eat a chickpea salad sandwich. (fact: I’m not an adventurous eater. I prefer “normal” food). I was pleasantly surprised. it is now a “quick, on the go” staple in our house. even the baby likes it!

let’s pretend we’re in middle school, playing truth or dare. you pick dare. I dare you to make + eat a chickpea salad sandwich. if you eat tuna or chicken salad sandwiches, I can assure you this won’t shock your system. it’s all the familiar flavors you’d expect. as a bonus: it’s healthier! chickpeas are a great source of protein, fiber, iron + more. I’d also venture to say it’s more “natural” for beans to be in a can than meat, but that’s purely my opinion.
I’m terrible at following recipes verbatim. I find a favorite + alter it just a bit to our family’s liking. this is my favorite chickpea salad sandwich recipe right here. I add ketchup + pickle relish to my sauce (in addition to the mustard + mayo). as for the veggies, I always add carrots + celery, and whatever else I have on hand – like red onion, cabbage, bell pepper, etc.
