be healthier trick myself into eating more vegetables, the husband + I purchased a spiralizer. because there is no greater way to fool oneself than to disguise your vegetables as noodles. I was skeptical about all of it. there was no way it’d be easy to use. and if it was, the noodles would taste terrible. (I had low expectations). I was so pleasantly surprised, I told every person I came in contact with for the next two weeks just how life-changing zoodles (zucchini + noodles) were.

to make the switch, substitute vegetable noodles into any of your favorite noodle recipes. I fell hard for this chicken + peanut sauce recipe. it’s simple + tastes absolutely delicious. I add more vegetables to the zucchini + squash noodles, like corn, red onion, broccoli, bell peppers, jalapenos. add sauteed chicken sausage + toss with sauce. but really, any pasta recipe can made healthier. toss with pesto, marinara, alfredo, or vodka sauce. you won’t even miss the carbs.
