when fall rolls around, nearly everything should include pumpkin. everything from the décor on your front patio, to your pancakes + coffee, and even your frozen yogurt. I like to keep a can of pumpkin on hand. you never know when inspiration for your next pumpkin creation will strike. after dinner one night, the husband + I were hit with a sweet craving. typically this would prompt a trip to the local fro-yo shop or a pantry-raid. well, I couldn’t be coaxed into publically-appropriate attire. so I had to make on-hand ingredients work. that’s how the pumpkin frozen yogurt came to be. (contrary to popular belief, I didn’t have mini pie crusts in my pantry. that was added in round 2).

no need to go out for frozen yogurt tonight.
this sweet fall treat takes very little time + hardly any preparation. in a mixing bowl, add all ingredients. I just eyeball the measurements. I know I want majority greek yogurt, quite a bit of pumpkin, a happy dash of pumpkin spice, and a handful of chocolate chips. mix everything together, until well combined. this is when you taste, adjust accordingly. pour pumpkin yogurt mixture into mini pie crusts. place in freezer, for at least one hour. top with whipped cream and love every bite.
for ingredients: plain greek yogurt. canned pumpkin. pumpkin spice seasoning. mini chocolate chips. caramel sauce. mini pie crusts. (optional: whipped cream for topping).
