{iowa girl eats} is the queen of quinoa cups. and after falling in love with her {mini ham & cheese quinoa cups}, I knew I wanted to make my own spin off. think: sausage & cheese omelet, with all the fixings. add quinoa. and you have perfection.

my mom always drained ground meat with a paper towel when I was growing up. so that’s how I do it. choose the method that works best for you.

cool the quinoa & ground sausage. otherwise they’ll cook the eggs when you mix all the ingredients together. that’d be bad.

[you can also use: spinach or kale. I had this ‘spring mix’ on hand. and it worked great!].

3/4 cup bell pepper. 1/3 cup red onion. 1/3 cup mixed greens.

stir all ingredients together.

or until golden brown on the edges.

[my oven is a tad slow, so I kept mine in for 23 minutes].

makes approximately 40 breakfast bites.

ingredients:
2 cups cooked quinoa [approximately 1 cup uncooked]
1 1/3 cup ground [cooked] breakfast sausage
4 eggs
3/4 cup bell pepper, diced
1/3 cup red onion, diced
1/3 cup mixed greens, diced [use dark leafy greens: like kale or spinach].
1 cup shredded sharp cheddar cheese
2 tablespoons grated parmesan cheese
salt & pepper

directions: 

  1. cook quinoa according package directions. [I cooked mine in chicken broth for added flavor, but you can definitely use water]. also cook breakfast sausage through and drain. let quinoa & sausage cool. [they cannot be hot when mixed with the other ingredients, or they’ll cook the eggs. not ideal].
  2. preheat oven to 350°F. spray mini muffin tin, liberally.
  3. dice all veggies. 3/4 cup bell peppers. 1/3 cup red onion. 1/3 cup spinach or kale. in a separate bowl, scramble 4 eggs.
  4. to your 2 cups cooled quinoa, add: 4 eggs, all veggies, 1 cup sharp cheddar cheese, 2 tablespoons parmesan cheese, 1 1/3 cup cooked breakfast sausage, and a pinch of salt & pepper. stir everything together!
  5. spoon quinoa & sausage mixture into mini muffin tin. place in oven for 18-20 mins [or until golden brown on the edges].
  6. let quinoa breakfast bites cool in the mini muffin tin for 5 minutes. and ..
  7. enjoy!
