the husband is from chicago. the land of pizza toppings hidden under the sauce. which is a concept I, as an iowan, do not understand + have a hard time appreciating. I know pizza requires sauce. my question is always what toppings are you hiding under that sauce? and are they called toppings if they’re underneath? it’s just beyond me. and in a chicago vs. new york style pizza contest, I must side with new york every time. (I’m a thin crust fan, cut into squares).

I said all of that, to say this.. marriage is about compromise. so, when an authentic chicago pizza restaurant opened near us, rosati’s, we went. the day it opened. that’s where the husband won. the rest were my victories ..

I somehow encouraged the husband to order jalapeno poppers over bread sticks. AT A PIZZA PLACE. they were surprisingly scrumptious! and as a true iowan, they have delicious ranch dressing. (believe me, there is more bad out there than good). we ate them as we waited for our pizza. mostly because I was starving + impatient. not to mention, it had just opened. so there were a few people with the same idea. we didn’t order a chicago-style deep dish. although I would’ve been a good sport + happily ate it. we agreed on their double dough crust, topped with sausage + onion + green peppers. chicago won this battle!

    That looks delish!!! We will have to give it a try! Fun that you can purchase the sauce!!
    Have you tried The Checkerboard in Pleasantville?? My favorite!!! Best pizza and onion rings!! Then coffee and ice cream to follow across the street at the original Smokey Row!
    Next week we will enjoy New York pizza at Antonio’s Wood Fire Pizza in Estes Park, Co… pizza with a perfect view of the mountains next to a rushing mountain stream is just THE BEST!!!

      You should absolutely try Rosati’s – I recommend, obviously! I have not tried the checkerboard. sounds like I must make a trip to pleasantville – pizza & ice cream night. I LOVE ESTES PARK! they have a great local brewery too. my husband + I have spent a bit of time there. have so, so much fun!! 🙂

        Our son, who isn’t able to go this year has already placed his order for us to bring back some Samson Stout from the EP Brewery!! 🙂
