as I mentioned in part I (see here) .. it is important to have a “bag of tricks” – a few recipes you can throw together in mere minutes with the ingredients you already have on hand to satisfy those unexpected guests. or to quickly prepare as your husband is waiting in the car + you’re clearly going to be late to that party. maybe even for those evenings when you can’t quite muster up the energy to actually make dinner. (we’ve all been there).
I started with the always-great combination of cheese + crackers, but I have a feeling this recipe’s festive + pretty presentation may make this a favorite ..

for this simple holiday appetizer recipe, you only need SIX INGREDIENTS: prosciutto, salami, cherry tomatoes, green olives, mini mozzarella balls + spinach (or basil leaves). make it simple on yourself – we’re talking no additional trips to the grocery store. I recommend using the ingredients you have in your fridge + pantry. I like to
almost always have a few items on hand that I could use to throw together a meat + cheese plate. this is when those items come into play. I use olives + tomatoes, not only for the red + green holiday thing, but I’m not the largest fan of tomatoes. so this gives me options (instead of just handing the tomatoes to my husband). skewer them + drizzle with balsamic vinegar.
don’t be thrown off by surprise guests or last-minute “bring an appetizer” invitations anymore!
