I have the fondest memories of baking holiday cookies with my grandma as a young kid. they were sugar cookies masterfully cut into snowmen, reindeer, santa hats + bells. then covered in powdered sugar frosting + decorated in an obnoxious amount of sprinkles.

I wanted to start a holiday tradition of baking with my little one. he’s 4 months shy of turning two, has an abundance of energy + loves to make messes. so, I wanted to find a cookie recipe that had only a few ingredients, was easy to make, but really delicious. another important item: wait time! neither of us are crazy patient + waiting to take that first warm, gooey bite is torturous. 10-12 minutes is our max!

I do a bit of preparation before I get the little one excited. I get out all of the ingredients, measure them out + pour into bowls. once that’s done, I call in my helper! he pours each ingredient into a large mixing bowl (with a bit of guidance from mom). we stir + mix the cookie dough together, typically after he steals a chocolate chip or two. I form the cookies into balls and jackson does his best to smash them flat. I reform + he flattens. we do this for awhile, until one of us gives up. the cookies go into the oven for 10-12 minutes and we make sure the oven light is on, so we can watch the action.

depending on the size of your cookies, you can make quite a few with this recipe. jackson + I prefer making a dozen good sized cookies and one extra large cookie for immediate enjoyment. when grandma helped us bake our masterpieces, she must have gotten 24 small cookies out of this recipe. we all have our ideal cookie size. jackson + I prefer large. to each their own, right? they’ll be good in small, medium, large, or extra large. we can promise that.

this is the EASIEST holiday cookie recipe.

YOU ONLY NEED FIVE ingredients.

• 1 package yellow cake mix

• 1/2 cup of oil (I use vegetable oil)

• 2 eggs (I substitute egg whites)

• 1 cup chocolate chips

• 1/4 cup crushed peppermint (I smash 4 candy canes into teeny, tiny pieces for this)

we adopted this recipe from buzzfeed’s tasty – it’s their chocolate chip cake mix cookies. we added peppermint for a festive twist. you could also add toffee bits, holiday sprinkles, or dip them into melted white chocolate. mix all the ingredients together, form into balls, and bake for 10-12 minutes in a preheated oven at 350º F.
